Ingredients
- whipped cream for garnish
- fresh strawberries
- kiwis slices
- bluberries
- raspberries
- other seasonal yummy fruit other
Crust
- 1 ½ c flour
- ¾ c unsalted butter, softened and sliced
- ½ c powdered sugar
Filling
- ½ c sugar
- 8 oz cream cheese
- 1 t vanilla extract
Glaze
- ¼ c sugar
- 1 T corn starch
- 6 oz frozen limeade concentrate, thawed
Directions
Make the crust and set aside to cool. Make the filling and spread over cooled crust. Slice the strawberries and other fruit and arrange artfully on top of filling. Brush top of tart with glaze (you won’t use it all) and garnish with whipped cream.
Store in the fridge.
Crust
Preheat oven to 350. Mix dry ingredients and then cut in the butter. Mix until the mixture forms a ball. Press the dough into a wide pie pan or tart pan. Pat until crust is even. Bake 10-12 minutes, until very lightly browned.
Filling
Beat the cream cheese, sugar and vanilla together until smooth.
Glaze
Combine the limeade, cornstarch, lime juice and sugar in a saucepan and cook over medium until clear and thick, about 2 minutes. Let cool.
